For Rosh Hashana, the Jewish New Year, our tables are filled with foods that symbolize sweetness, blessing, and abundance. Two of the most traditional ingredients are pomegranates, representing fruitfulness and the hope that our merits multiply like their seeds, and honey, symbolizing a sweet year ahead.
This Pomegranate + Mint Baked Salmon with Honey brings those flavors together in a dish that is as beautiful as it is delicious. The salmon is tender and flavorful, glazed with a tangy-sweet sauce of pomegranate molasses, honey, and fresh herbs. It’s easy to prepare, nearly foolproof, and makes a perfect centerpiece for your holiday table. Even better—it’s light, fresh, and crowd-pleasing, so it balances out the richer foods of the season.
Pomegranate + Mint Baked Salmon with Honey Recipe
Serves 4
Ingredients
- 1.5 pounds salmon (remove skin from bottom)
- 1 Tbsp. SPICE + LEAF Salmon Spice Blend
- 1/4 tsp. sea salt
- 8 garlic cloves, chopped
- 1/4 cup pomegranate juice
- 1/4 cup honey
- 4 Tbsp. pomegranate molasses
- 2 Tbsp. soy sauce (can also use Tamari or Coconut Amino to make soy-free and/or gluten-free)
- 2 Tbsp. SPICE + LEAF Galili Premium Israeli Olive Oil
- ¼ cup + 1 Tbsp. fresh mint, chopped, (save 1 Tbsp. for garnish)
- 1/2 lemon, juice one good squeeze over fish after it comes out of the oven
- 3 Tbsp. pomegranate seeds, sprinkled over cooked fish for garnish
Cooking Instructions
Step 1: Preheat oven to 350 degrees.
Step 2: Place salmon in glass baking dish (Pyrex recommended). Rub Salmon Spice Blend onto salmon. Add salt.
Step 3: In a bowl, combine garlic, pomegranate molasses, pomegranate juice, soy sauce (or coconut aminos), honey, olive oil + mint. Whisk together well. Pour sauce over fish.
Step 4 (Optional): Cover fish and place in the refrigerator to marinate for up to 4 hours.
Step 5: Bake for about 15 minutes. Fish should have an internal temperature between 140 – 145 degrees. When done, squeeze lemon juice on top of fish. Garnish with pomegranate seeds and the remaining chopped mint.
